My mother always made this for Christmas and it is still my favorite!
German Apple Pancakes
Makes 1 large pancake
Best pan = oven pancake pan
Preheat oven to 425°
Batter:
1) 5 eggs
½ cup flour
1 tbsp sugar
½ tsp baking powder
¼ tsp salt
1 cup milk
Add:
2) 1/8 cup (2 tbsp) melted butter
1/8 tsp nutmeg
1 tsp vanilla
Mix batter in blender- set in fridge overnight or on counter for 30 min
Filling:
Mix together ¾ cup sugar
1 tsp cinnamon
1/8 tsp nutmeg
Peel and slice 1 large apple (preferably granny smith)
In pan on stove top, melt ¼ stick butter- brush up onto sides of pan. Sprinkle 1/3 cup sugar and spices over butter. Layer apples evenly over butter and sprinkle the remaining on top. Over medium high heat cook until mixture bubbles. Pour batter over apples.
Bake at 425° for 15 min. Reduce heat to 375°. Bake for additional 10 minutes. Should be crispy.
Serve warmed with sour cream.
